Few weekends ago, I decided to make ginataang mais or corn and sticky rice with coconut milk. It is a Filipino dessert or snacks made of corn, sticky rice and coconut milk, quick and easy recipe!

Ingredients:

1/2 cup of sticky rice

1 cup of  cream style corn

1 cup of sweet corn kernels

2 cups of coconut milk

3/4 cups of  sugar

4 cups of water

Note: you can just used sweet corn kernels (2cups) if the cream style corn is not available, I just used it because we still have in the fridge which is the leftover of another recipe!

Method:

In a pan, combine coconut milk, water and sticky rice, and let the it boil. Once the coconut milk is boiling, stir the mixture to prevent the sticky rice from sticking in the pan. Set the heat to low and let the rice cook while stirring once in a while, about 10 minutes.

Add the cream style corn and whole kernel corn, and cook for 5 minutes. Then add the sugar and stir thoroughly, cook for 2 more minutes or until done.

Ladle in a serving bowl and serve hot or cold. Enjoy your snacks!

Well, we all enjoyed a bowl of it…a winner for everyone. We loved it, delicious and simple afternoon snacks that we are having every now and then! Sharing this with Weekend Eating and Yummy Sundays! :)
