Hi, how are you today? I will be joining WEEKEND EATING of I Live to Eat! for the second time around but probably my first entry wasn’t even noticed because I did it an hour before it ends though this time I am still late but I think still ok…I hope so!
For the weekend eating, we sometimes have Mango Sticky Rice…

for not so little one, hehehe!
Mango Sticky Rice is an absolute must try if you’re in Indochina area, much more in Thailand! It is just easy to do, its made of sticky rice with coconut milk then served with mango slices, very simple but one of the tropical dessert that you shouldn’t miss.
You’ll be needing a 2 cups of sticky rice and mango, 2 cups of coconut milk, 4 tablespoons of sugar and pinch of salt. We are just simply cooking the rice in the rice cooker. Heat the coconut milk in a pot over medium heat with continuous stirring while letting the coconut milk simmer. Hard boiled coconut milk with curdle. Add sugar and salt. Then put the rice into the coconut milk mixture, the sticky rice will absorb all the coconut milk, rice should be little mushy. Peel and slice ripe mango. Serve it on the side or on top of the sticky rice! Can be served hot or cold and can put coconut milk on top of the sticky rice, your preference.
There’s more recipe online on how to do it, there are other ways and more complicated one for me, hehehe, there’s traditional way and microwave style…like they always say here in Cambodia, up to you!

This is something I really hope to cook… I love it when the rice is soft and mushy and the mangoes really sweet. Adding some coconut cream, delicious!

Hi there! this is just what I exactly mentioned to my colleague days ago. This is the snack that I miss to eat. Suman and manggang hinog. But I don’t know where to buy suman here as they have a different way of cooking it here. But now, maybe I should try your recipe. Thanks for sharing!
