Less than one hour before closing, I can still join Weekend Meme of I Live To Eat! Jenn, the owner of the meme invited me to join last week thru her comment at FTF, I said yes but poor me, wasn’t able to post but as I am checking the meme now, it is still open, 57 minutes more…so, here I am writing and joining…thank you Ms. Jenn!

Last couple of weekends ago, during those lazy afternoon…I just decided to cook the Instant Three Mix Tapioca Dessert or known as Ruam Mitt in Thailand, its one of those instant Thai dessert that I bought from Lucky Supermarket before.

Ruam Mitt is the best cold dessert with crushed ice but we ate eat without crushed ice, hehehe! Its pack includes three different color of dried tapioca (green, pink and yellow), very small tapioca pearl, dried jackfruit chip and sweet coconut powder! This dessert is  very easy to prepare and ready in 10 minutes, very sweet with coconut milk!

Just put tapioca dessert and tapioca pearl into boiling water (1400cc) but make sure to stir it occasionally and continue to boil for another 10 minutes. After boiling, drain well and redy to serve with well done sweet coconut soup. To make sweet coconut, dissolve coconut milk powder and add dried jackfruit chip in 1/2 cup of hot water and add to prepared dessert, best serve with ice!

My kids and us like it, just right sweetness…and here’s Isabelle, enjoying her small bowl of the dessert!
