I am happy to have Mama Sita’s available here in Phnom Penh because Filmart are selling Mama Sita’s products…lucky, because I was able to do some Filipino foods that I’ve been craving. I know I can just buy in the number of Filipino restaurants around but the process of preparing and cooking it, makes me excited and happy! Plus as a newbie cook (naks!), I really wanted to learn how to do it, even by just using ready mixes for now…I am trying!
Well, one of them is the Pancit Palabok…well, there are many ways to prepare noodles, but the idea of smothering noodles with a sauce heavy with the aroma of seafood and garlic make this Filipino food an altogether different gastronomic adventure…
Sharing with you the ingredients and method listed at the back of the pack of Palabok Mix (Oriental Gravy Mix).
Ingredients:
1 pouch (57g) Mama Sita’s Oriental Gravy (Palabok) Mix
8 oz (227g) bihon (rice noodles), cooked as directed in the package
2-1/2 cups (625mL) water or unsalted soup stock
2 tbsp. (30mL) cooking oil
1 tbsp. (8g) minced garlic
1/4 cup (15g) tinapa (smoked fish) flakes
For Garnish:
2 hard boiled eggs (peeled and sliced)
3 tbsp. (15g) spring onions (chopped)
1/2 cup (100g) shrimps (boiled and peeled)
1/4 cup (15g) tinapa (smoked fish) flakes
1 tbsp. (15g) minced garlic
1/2 cup (30g) crushed cracklings
1/2 cup (100g) squid (cooked and cut into rings)
Method:
1. Dissolve a Mama Sita’s Palabok Mix in favored liquid.
2. In a wok, saute garlic and tinapa flakes in oil, then stir in dissolved Mama Sita’s Palabok Mix.
3. Bring to boil, stiring until thick enough to coat te back of a spoon.
4. Put bihon (rice noodles) in a serving platter and our sauce over it. Garnish with eggs, spring onions, shrimps, squids, cracklings, etc. Serve with calamansi (Philippine Lime) and patis (fish sauce).
Oh, I didn’t add tinapa (smoked fish) flakes because I cannot find one here or I just did not looked for it that much…and I just used water instead of an unsalted soup stock! Also, we used lime not calamansi but I wish we have calamansi.
Anyway, everyone enjoyed the noodles…even Daddy, we had this for afternoon snacks yesterday and we are still full by dinner time. They said its delicious which makes me happy although Mama Sita helped me to achieved the right taste, hehehe! Well, I had it again for dinner while Dad and CJ had their dinner meals…Daddy had sausage, pasta and glazed baby carrots while CJ had rice and scrambled eggs that he cooked!

Wow! It looks so yummy! Palabok is my favorite to the point that I have it for breakfast everyday when I was working. Good thing there’s a nice turo-turo near my father’s place back then.
