Sunday’s almost over and we had a quiet day at home…its just us lazing around the house, playing with kids and watching old movies in between! I did cooked pancakes again for breakfast and I’ve made some meatballs for lunch with sauteed cherry tomatoes on topped! Thanks to my Minute Meals book. *smile*
And for our afternoon snacks, I got busy preparing something new right after washing all the dishes that we used during lunch. While they are having fun playing in the living room with Daddy, I decided to get busy in the kitchen doing Maja Blanca and Latik…
Maja Blanca
Ingredients:
1/2 cup cornstarch
3/4 cup sweet corn kernels
1/2 cup sugar
2 cups thin coconut milk (I just used the one in pack, so i think its think coconut milk)
3 tbsp. sweet corn kernels
coconut oil (from the Latik recipe) to grease mold pan
Method:
Ground the 3/4 cup corn kernels in a blender ) or food processor, sieve well. In a saucepan, combine the sieved ground corn with cornstarch, sugar, coconut milk, and 3 tablespoons corn kernels (I actually added more then 3tbsp.). Cook over medium heat until thickened, stirring constantly. Pour into greased mold pan (I used square aluminum foil.) and cool until set. Unmold and top with sweetened latik.
Latik
Ingredients:
2 cups think coconut milk and 3 tbsp. sugar
Method: Boil coconut milk until oil separates from mixture. Pour off the excess oil, use this oil to grease the mold pan so that means you need to do latik first. Then add sugar to latik and cook further until crisp.
I was actually wrong with this…I forgot to cooked sugar too so, I just added it after, nevertheless it taste delicious still but maybe more if I followed the recipe well. Oh, maybe next time!
Anyway, here’s a slice…my kids, hubby and I all enjoyed eating! Guess who ate a lot? hehehe!
Its Daddy, he said its his first time to ate something like that and its really delicious. Thanks Dad for liking it. He actually enjoyed eating it without latik because I was thinking he won’t ate latik but after he saw us eating with latik, he asks and he said he want to try, so he did, and he enjoyed it more.
He had it with coffee and us, just water! Well, we will definitely cooking this again since everyone enjoyed. I’m happy to see that they are enjoying each meal I prepared.
Anyway, we just had some chicken for dinner. And it was a great week and weekends, we got busy attending birthdays and wedding but we all had fun, and we feel thankful that we got invited. I will be posting more about those occasion.
Tomorrow, its Adele’s birthday and I will be baking a chocolate cake and will be cooking some spaghetti for her even she’s not here with us.

my sister and i used to make maja blanca, but without the latik. we noticed kasi that our family leaves the latik behind, kaya di na namin nilalagyan ung maja. lol.
