Hi, everyone…its Tuesday already and how was your Monday? Mine was bit busy as usual because its Mondays when I do grocery shopping, trip to post office to check our box and send postcards, pay bills and do other errands that would come along the way!

And I am happy yesterday because I got a good deal from Ezecom, our internet provider here in Phnom Penh…after being a subscriber for a year, I finally score a good deal…gave me some discount. We used to pay $108.90 for the first 6 months then it became 86.90 from 7th to 12th month…and now it goes down to $75.90…saving $11 a month, which is really good.

Another thing is, I just discovered using SKYPE, funny, I know its been long since it was introduced but I only started using it yesterday…another savings for us, less phone calls…yehey!

Also, got lots of postcards…that I will be sharing on my Postcrossing Mom site, so I am happy postcrosser yesterday!

Ok, ok, just wanted to share these things…but anyway, also happy to share how to make a Baby Glazed Carrots, its easy as 1-2-3 but its delicious…

Ingredients:

baby carrots (partially blanched)

1 tablespoon butter

1 teaspoon sugar, or to taste

salt and pepper to taste

In a skillet large enough to hold them in one layer, arrange the carrots. Add just enough water to cover, and add the butter, sugar, salt and pepper. Bring to a boil, and simmer, stirring occasionally, until almost all the water is evaporated and the carrots are glazed and just tender. Transfer to the plate and serve!

I served this glazed baby carrots together with 2 sausages (which I forgot its name) and a Four Cheeses Chicken and Bacon Pasta for K’s lunch…
