I like paella but I don’t know how to do it, I never look for its recipe online until I saw this recipe that I found in my book Minute Meals. Well, the original one needs a lot of work, I mean more ingredients and longer cooking time. But lucky to found this Paella in a Flash recipe that will saved yourself some valuable time, fast and easy!

Anyway, second time I cooked it was just tonight, Darah cannot come to cook dinner for us so, I did the cooking. But I only made a dish that’s half of the total recipe, just enough for Daddy to finished because we got something in our mind, a Kare-Kare that I will be sharing next time! The recipe is for 4 servings. But last week, we cook it as is (but I added some red pepper slices), anyway, here are the ingredients and how to do it…

Ingredients:

4 large garlic cloves

1 can (14 ounces) diced tomatoes

1/4 to 1/2 teaspoon dried red pepper flakes

2 tablespoons olive oil

4 ounces sliced dry chorizo or a package of sliced pepperoni

1 pound peeled and deveined large shrimp, patted dry

1 teaspoon paprika

1/2 teaspoon turmeric

salt and pepper to taste

Method:

1. Smash the garlic cloves with the flat side of a large knife. Drain the diced tomatoes and reserve.

2. In a large deep nonstick skillet, cook the garlic and red pepper flakes in the olive oil over medium-high heat, stirring, just until the garlic begins to turn golden, about 2 minutes.

3. Stir in the chorizo or pepperoni and cook, tossing, until heated through, 2 to 3 minutes.

4. Add the shrimp. Sprinkle with the paprika, turmeric, a little salt and a good bit of pepper. Cook, tossing with 2 spoons, until the shrimp turn pink and are opaque in the thickest part, 2 to 3 minutes.

5. Add the tomatoes and bring just to a simmer. Remove from the heat. Taste for seasoning. Remove the garlic cloves,  if you like.

6. To serve the paella, spoon it over the top of rice and enjoy!

You can serve this paella in a flash together with a rice, French rolls and a cucumber and ripe olive salad. For desserts, you can have fresh cherries with chocolate wafers. And it is now a gourmet meal.

Paella is a party dish if ever there was one and this recipe is really something you can do in a flash…I think that I can do this next time we have party in the house!

Anyway, we all love it…Isabelle just like the shrimp and the squid, oh, yes, I forgot I added some squid since we have it and I just used pepperoni. CJ likes it. K said its tasty and just right. And I like it too!

  1. Yummy Paella! You can mix the seafood and chorizo mixture with rice so it will look like the original paella. I have this easy Filipino Paella recipe on my site in case you’re interested. :)
