Hi fellow food trippers…I will be sharing a homemade foods that I prepared for my family last New Years Eve, together with my Food Trip Friday 011 entry last week…
Will be sharing with you the recipe of Fettuccine Alfredo, and it is good to have pickled vegetable as a partner and a carrot cake to complete the meal as what I have seen on my book, MinuteMeals.
Anyway, to make the Fettucine Alfredo you need the following:
For the pasta:
4 quartz water
12 ounces fettuccine
salt to taste
oil
For the sauce:
1 cup pure milk, I used Cowhead milk
1/2 cup sour cream
1 cup grated Parmesan cheese, plus additional for serving
2 tablespoons butter
ground pepper to taste
dried parsley (optional)
1 cup cooked bacon (optional)
*you can add 1cup cooked green peas, or 1cup chopped ham, or 1 4oz can mushroom.
Method:
1. Cook the pasta according to the directions on the package until just al dente.
2. Make the sauce: In a medium saucepan, heat the evaporated skimmed milk until hot. Remove the pan from the heat and stir in the sour cream and the Parmesan cheese until thoroughly combined. Add the butter, place the pan over low heat, and cook stirring until the butter is melted and the sauce has thickened slightly.
3. Pour the sauce over the pasta, toss to coat the strands, put the cooked bacon strips then add a generous amount of black pepper to taste and dried parsley. Toss to combine.
4. Serve the fettuccine in pasta bowls, with additional Parmesan for serving at the table. Served for 4 to 5 people, just enough for us!
Then on the serving platter, I arranged the mixed pickled vegetables such as gherkins, cauliflower, red pepper, pearl onion, mustard gherkins, carrots, black and green olives…
and when ready for dessert, I served the carrot cake that I baked earlier.
So, its a complete meal…oh, the carrot cake is a ready mixed carrot cake in a box but I just added vanilla frosting and topped it with some dried fruits. Its another 20-minute gourmet meal…:)
