Hi, I am excited today because I will be sharing something new for me, I am sure you did this many times but please do remember I am a newbie “trying hard chef” in our house…starting to learn the ins and outs in our tiny kitchen. I am not cooking that much before because we have a cook, she’s been cooking for K for 15 years. But a mum & partner in me wanted to try new things and explore the kitchen. So, I am trying this year and I am doing good, getting better as what K always says…isn’t he sweet?! hahaha! But believe me, he is telling me straight if its not good which I like best because I can improve next time…and every thing’s delicious for him on my first try! *winks* I am cooking lunch foods these days and sometimes on weekend, I am loving it.
Did you enjoy the Singaporean foods that I shared last Friday?! I hope so! Well, I made something new for lunch for him this week and it was a Tomato Pesto Pasta Salad…
I used colored penne pasta but I think you can try it with any kinds of pasta, cooked and drained. Stir pesto sauce mix, 3tbsp. oil, 1/2 cup milk for creamy pesto in small saucepan until well blended then cook on medium heat until heated through, stirring occasionally. Toss pasta with prepared pesto. A blend of basil, Parmesan cheese and garlic helps create a perfectly seasoned pesto sauce. Then add 1 cup halved cherry tomatoes, 4tsp. vinegar, 1/4cup shredded Parmesan cheese until well mixed. Refrigerate until ready to serve. Oh, I added 2 Hungarian sausage that I bought in local supermarket here, can also used 1/2 cup of sun-dried tomatoes but cherry tomatoes is cheaper for me, also should used white wine vinegar but during the time of cooking, we don’t have so I just used cane vinegar from Philippines (Datu Puti)
Also linking this week recipe to Food Friday, Friday Potluck and Foodie Friday…happy Friday everyone!
