…was first thing comes to mind when we run out of gas when I was about to cook Tinola for dinner. Since its only me and the kids around…I baked 4 pieces of chicken thighs but marinated it first by using a McCormick Grill Mates Tomato, Garlic and Basil Marinade.
Just easy, just needed 1/4 cup of water, 1/4 cup of olive oil, 2 tbsp. Dijon mustard (but can use 2tbsp. white or balsamic vinegar) but I added 1 tbsp. of lemon juice (I squeeze fresh lemon) to make a Zesty Tomato Marinade.
One pack is good for 2lbs. of chicken, shrimp or beef but since I only have 1 lb. of chicken thighs, I half the marinade and put the other half in the fridge for next time.
Well, just combined marinade mix to all other ingredients. Add meat, turning to coat all sides. Then marinate in refrigerator for 15 minutes or longer for extra flavor (I marinated it longer.) Bake until done, basting with remaining marinade halfway through cooking if you like (I like so I brushed the remaining marinade). I baked it for 45 minutes in 220C.
Result was a mouthwatering blend of sweet tomatoes, garlic, and basil…its full of flavors and we really enjoyed having it for dinner!

Thanks for this post.. I have always wanted to try the McCormick grill mates, but I was quite skeptic about it. I will try using one next time.
I used to bake chicken like this and I think I wanted to do it again.
